So, who are we?

We are Tiffany and David Smith formally of Le Trèfle A Quatre Feuilles in the Dordogne.

We were both in the casino business in a former life and it was in France working at the Carlton Casino in Cannes that we met and decided to end up in France. After a time globe-trotting setting up casinos around the world, we settled in the Dordogne and built our hotel-restaurant Le Trèfle A Quatre Feuilles. Initially we had a chef, whom Tiffany spent 4 years working with in the kitchen, before he left when she took the momentous decision to take control of the kitchen. It has turned out happily: Tiffany loves food and cooking - it is her passion- and Dave is the genial host. However, it is time to leave the hotel part behind and concentrate on a new project: Bistrot Le Cortal.
We are sad to leave the Dordogne and the many friends we have made and people we have got to know -- but happy to be moving on to a new adventure. 7 years in one place is a record for us!

Restaurant Le Cortal was a run-down grillade that desperately needed some love and affection (and investment!). It is a converted stable and used to work from an old barbeque on the terrace. After 10 months of renovation, it has lived up to its' promise of somewhere that could be lovely: stone walls, wooden beams, great views over the mountains, and the Catalan holy mountain the Canigou. We have completely refurbished the place to the most recent standards, including major building works to relocate the customer toilet, redo the electrics from top to toe and a brand new kitchen.

We have two sides to our menu:

Hot stone cooking, where the customer cooks his/her choice of food on a hot stone at the table. This is a fun and unique form of dining.

The other side will be the Bistrot menu, where Tiffany will cook modern and traditional dishes for (hopefully) your delight and delectation.
